So it's been over a month since I posted this, and a few things have changed, the relevant information that arose being on EP values of gear, and simulated data for specs.
So right now in terms of single target dps Subtlety and Combat are both simply better than assassination, but only once you have obtained an AoC, preferably a normal mode or higher, but any ilvl trinket is a massive dps increase for these specs.
Obviously stat values vary slightly, but for Sub and Combat they are reasonably similar, both prioritizing haste, with mastery and crit being behind, but varying very little, with mastery being slightly better for combat, and crit being slightly better for subtlety.
The utility of all 3 specs vary, Assassination brings stable dps which does not suffer too heavily from downtime and has probably the best aoe of the 3 specs.
Combat and Sub are much different, both bring on demand burst however both suffer a lot more than assassination from downtime, both requiring proper management of cooldowns and buffs/debuffs. Combat of course brings extremely good cleave while subtlety has fairly decent aoe.
Overall you should be sticking with Assassination until you get an AoC, at which point combat and sub pull ahead. Bare in mine that both these specs have big problems, namely positioning. With the requirement to be behind the target at all times for sub and the large portion of your damage that 'Killmespree' brings, you will find that some fights make playing either of these specs very difficult, so while combat and sub may have bigger numbers, do not be afraid to just play assassination for a fight, because it's dps is not far behind that of combat and sub.
